Buah Tangan dari Boss

Last Monday boss balik Malaysia..lama gak dia balik kampung. Dapatla membrowsing blog kawan2 semasa pemergian bossku. Nampaknye boss dah balik ni masa for browsing takda la nampaknye..terpaksala kurang2kan..Boss bawa buah tangan dari Iran, pistachios and some candies. Thanks Boss.

Kuih Seri Muka















Hari Ahad yang lepas my brother in law and my biras, Shikin datang..tak tau nak hidang apa. Dlm almari dapur ada pulut..hmm decide buat seri muka. Seri muka yang Fiza buat ni takda letak telur seperti kebiasaan yang orang lain buat. Sesiapa yang berminat mencuba seri muka tanpa telur boleh la cuba resipi ini..

RESIPI

Bahan lapisan atas

2 cawan tepung gandum
1 3/4 cawan gula
2 cawan santan pekat
2 cawan air daun pandan
sedikit pewarna hijau
sedikit garam

Bahagian lapisan bawah

500 gram beras pulut
sedikit santan cair (memadai pulut terendam)
1/2 sdu kecil garam

Cara-caranya

Bersihkan pulut dan rendam sekurang-kurangnya 3 jam. Basuh dan toskan airnya. Masukkan beras pulut ke dalam acuan 10 x 10. Masukkan campuran santan cair dan garam. Kukus pulut lebih kurang 1/2 jam. Apabila pulut telah masak , padatkan dan ratakan pulut.

Sediakan bahan lapisan atas. Campurkan santan dan tepung, air daun pandan, gula dan sedikit garam dan pewarna hijau. Kacau sehingga sebati dan tapis bancuhan santan tadi. Tuangkan bancuhan tadi di atas pulut yang telah ditekan tadi dan kukus sehingga masak.

Baked Macaroni

Salam Semua Sahabatku dan pembaca semua..resepi ni ada sedikit pembetulan. resepi sebelum ni Fiza terlupa nak tulis cendawan dan tomato. Fiza dah ammend resepi..

My Version Baked Macaroni

Ingredient

1/2 packet macaroni (rebus , tos dan gaul dengan sedikit minyak /butter)
1 can cendawan butang (potong ikut suka)
2 biji buah tomato atau sepeket tomato ceri (potong ikut suka)
2 labu bawang besar
5 ulas bawang putih
1 packet daging cincang
1/2 cawan sos tomato
1/2 cawan sos cili
3 sudu besar thousand island
sedikit lada sulah dan oregano

Bahan sos putih

1 1/2 cawan susu segar
1/2 cawan cream
1 kiub ayam
sedikit lada sulah & lada hitam
2 sudu besar tepung jagung (dibancuh dengan 2 sudu besar air)
1 cawan cheddar cheese

Cara-caranya

Tumis bawang sehingga kekuningan, masukkan daging cincang dan tumis sehingga air daging kering. Masukkan sos, thousand island, lada sulah dan oregano. Masukkan macaroni yang telah direbus. Kemudian masukkan cendawan dan buah tomato. Goreng dan angkat. Masukkan macaroni ke dalam acuan.

Cara membuat sos putih.

Masak susu dan cream sehingga menggelegak. Masukkan kiub, serbuk lada sulah dan lada hitam. Kemudian masukkan tepung jagung yang dibancuh dengan air. Biarkan sehingga pekat. Akhir sekali masukkan cheddar cheese. Biarkan seketika dan angkat.
Taburkan sos putih di atas macaroni sehingga agak-agak terendam dan bakar pada suhu 180C sehingga agak keemasan dan garing.

BAHAN CARAMEL

Butter 120 gram
Brown sugar 220 gram
Whipping cream 200 ml

CARA

Campurkan butter dan brown sugar dan masak diatas api perlahan sehingga gula hancur (elakkan bancuhan menggelegak) Masukkan cream. Masak sehingga menggelegak. Kacau dan biarkan sehingga 8 minit dan kacau berterusan. Angkat dan biarkan sejuk.

BASE

Butter 60 gram + 1 sudu besar
Brown sugar 30 gram
Dark chocolate 125 gram
Lemon juice 2 sudu kecil + 50 ml susu (biarkan bancuhan selama 5 minit)
Telur 2 biji (dipukul sebentar)
Nescafe 2 sudu kecil dengan 1 sudu kecil air panas
Esen vanilla 1/2 sudu kecil
Tepung gandum 60 gram
Serbuk koko 30 gram
Soda bikarbonat 1/4 sudu kecil
Walnut 100 gram (panggang dan dicincang)

CARA

Cairkan butter, gula dan coklat diatas air yg menggelegak (double boil). Kacau sehingga "smooth". Angkat dan masukkan bancuhan lemon juice. Masukkan telur, bancuhan nescafe dan vanilla. Msukkan bahan kering dan kacau sehingga sebati. Panaskan oven 180C. Grease acuan dengan sedikit butter. Taburkan sedikit tepung. Bungkus bahagian luar acuan dengan aluminium foil. Tuang bancuhan BASE ke dalam acuan dan bakar 10 minit. Turunkan suhu pada 150C.
Setelah masak tuang dan ratakan 1/3 CARAMEL ke atas BASE. Taburkan walnut cincang ke atas caramel. Biar sebentar.

FILLING

Cream Cheese 500 gram
Tepung jagung 2 sudu besar + 2 sudu kecil
Esen vanilla 1 sudu kecil
Whipping cream 200 ml
Telur 4 biji (dipukul sebentar)

CARA

Pukul cream cheese sehingga gebu. Masukkan 1/3 CARAMEL dan kacau. Masukkan tepung jagung dan vanilla esen. Kacau sehingga "smooth". Masukkan cream dan kacau sehingga bancuhan agak pekat. Perlahan-lahan masukkan telur dan kacau sehingga bersatu. Tuang bancuhan ke atas BASE. Letakkan acuan kek ke dalam "water bath". Bakar 1 jam. Tutup oven dan biarkan kek di dalam oven selama 30 minit. Keluarkan water bath dan biarkan kek sehingga sejuk di dalam oven dengan pintu terbuka sedikit.

HIASAN

Walnut 8 biji
Milk Chocolate 30 gram (dicairkan)

Tuangkan caramel ke atas kek. Hiaskan dengan coklat dan walnut.

Cream Cheese Pound Cake















I got this recipe from Bon Appetit magazine...this cake was great. Very buttery aroma, lovely texture but it was too sweet. So I ammended the recipe..2 1/4 cups sugar instead of 3 cups.

Recipe

Ingredients

1 cup butter
250 grams cream cheese
2 1/4 cups castor sugar
6 eggs
4 teaspoon vanilla extract
1 teaspoon lemon zest
3 cups AP Flour

Preparation

Butter and flour Bundt pan. Beat butter and cream cheese until fluffy about 4 mins. Add sugar, beat 10 min. Occasionally scrapping down sides of bowl. Add eggs 1 at a time. Beat in vanilla and lemon zest. Lastly beat in flour at low speed until batter smooth. (do not overbeat). Transfer to pan. Place pan in cold oven. Temperature 200 F, bake 20 mins. Increase to 250 F, bake 20 mins. Increase to 275 F, bake 10 mins. Increase to 300 F, bake until tester inserted comes out clean. About 30 mins. Cool in pan about 15 mins. Turn out cake and cool completely.

Starting from today onward, i thought of sharing some of my favourite, recommended and tested recipes with you. This time around i start off with New York Cheesecake. For this particular recipe there are a few tips and steps we should take into account. Do follow the instructions accordingly. Here we go.........

NEW YORK CHEESECAKE

Ingredient

BASE

  • 50 gram butter
  • 85 gram digestive biscuit (finely crushed) /nestume
  • 25 gram almond flakes (toasted)
FILLING

  • 600 gram cream cheese, i used Philadelphia cheese
  • 175 gram caster sugar
  • 3 tbsp cornflour
  • finely grated lemon zest
  • 1 tsp lemon juice
  • 1 tsp vanilla
  • 3 eggs, lightly beaten
  • 150 gram whipping cream
TOPPING

  • 150 Whipping cream
  • 1 tsp gelatin, dissolved in 35 ml water
  • 1 tbsp sugar
  1. Heat oven to 180C. Line 20cm spring form or loose-bottomed tin with parchment paper. Melt butter and stir in biscuit crumbs/ nestume and almond.Bake for 10 mins.
  2. For filling, beat cheese until smooth on low speed. Add sugar gradually, then add cornflour without overbeating. slowly whisk in lemon zest and juice, vanilla, then eggs. Finally whisk in whipping cream.
  3. Raise temperature to 240C. Pour filling over base, bake for 10 mins. If you are using an electric oven leave the door slightly ajar for the first three 3 mins. After 10 mins, lower heat to 110C. Bake another 25 mins. Turn off oven. Keep door closed and leave cake in for 2 hours. Open the door ajar and leave to cool in oven for 1 hour.
  4. Cool the cake for 6 hours/ ovenight. Unmould cake.
  5. Topping, dissolve gelatin in water. Cook low heat until gelatin dissolve, stir in sugar and lastly whipping cream. Spread the topping over cake. Can be served with blueberry or rasberry filling.
